What is Bilona Ghee?

Bilona Ghee is traditional, cultured ghee crafted using an ancient multi-step Vedic churning method. Unlike commercial ghee made directly from industrial cream, Bilona Ghee starts by boiling whole milk, setting it into natural curd, and bi-directionally churning the curd with a wooden churner (bilona) to extract fresh cultured butter (makhan). This butter is then slow-simmered over low heat to produce rich, aromatic golden ghee.

How is Bilona Ghee different from regular commercial ghee?

The core difference lies in the process and the starting point:

  • Regular Commercial Ghee: Usually mass-produced by directly separating raw cream from milk using high-speed centrifuges and rapid heat, skipping fermentation entirely.
  • Bilona Ghee: Prepared in small batches starting from cultured curd. Fermentation creates beneficial short-chain fatty acids, a deeper nutty aroma, and a superior granular texture.

What does "A2 Ghee" mean?

A2 Ghee is made exclusively from the milk of indigenous cow breeds (such as Gir, Sahiwal, or Red Sindhi) that naturally produce the A2 beta-casein protein. Commercial dairy cows (like Holstein-Friesians) predominantly produce A1 protein, which can cause digestive discomfort for many individuals.

Is Bilona Ghee safe for lactose-intolerant people?

Yes, pure Bilona Ghee is virtually lactose-free and casein-free. During the slow simmering process, water evaporates and all milk solids (lactose and protein) settle to the bottom and are strained out. This leaves behind almost pure fat, which is generally gentle on lactose-sensitive stomachs.

Is Bilona Ghee easy to digest?

Because Bilona Ghee starts from fermented curd, the fermentation partially breaks down complex dairy compounds. Combined with naturally high levels of butyric acid and short-chain fatty acids, it helps nourish the intestinal lining and supports smoother digestion.

Can I use Bilona Ghee for high-heat cooking and baking?

Bilona Ghee has an exceptionally high smoke point of approximately 485°F (250°C). This means it doesn't break down into free radicals or toxins at high temperatures, making it ideal for deep frying, sautéing, searing, baking, and traditional tempering (tadka).

Texture, Color & Purity

Why is my ghee grainy or danedar?

A granular (danedar) texture is a hallmark of authentic, slow-cooked Bilona Ghee. As melted ghee cools down slowly at room temperature, fatty acids form distinct crystalline structures.

Why does the color or aroma vary slightly between batches?

Natural Bilona Ghee is an unadulterated food product. The exact color (ranging from pale yellow to rich golden) and aroma depend naturally on:

  • Seasonal variation in the cows' diet (green monsoon grass vs. dry winter fodder).
  • Simmering temperature during clarification. We never use artificial colors, chemical thickeners, or synthetic aromas to standardize batches.

Why does my ghee change from solid to liquid?

Ghee naturally melts above 90°F (32°C) and solidifies at lower ambient room temperatures. Transitioning between solid, semi-solid, and liquid states is completely normal and does not alter the nutritional quality or safety of the ghee.

Storage & Shelf Life

Does Bilona Ghee need to be refrigerated?

No. Pure ghee has almost zero moisture content, allowing it to remain stable at room temperature without refrigeration. In fact, keeping ghee in the refrigerator can introduce moisture condensation inside the jar, which alters its natural texture.

How should I store my ghee jar?

  • Store in a cool, dry cabinet away from direct sunlight and stovetop heat.
  • Always use a clean, completely dry spoon to scoop out ghee.
  • Keep the lid tightly sealed when not in use.

What is the shelf life of Bilona Ghee?

When stored properly in a sealed container, pure Bilona Ghee has an unopened shelf life of 12 to 18 months.
